Snicker Salad -- YUM Dessert Recipe

http://www.motorclubofamericabenefits.tk

Snicker Salad - YUM

When I was working at the RV Resort in Lake Havasu City, AZ about 9 years ago, one of the snow-birds told the girls (who had all been working there a lot longer than I had) that she was bringing in some of her snicker salad later that day. The girls were very excited about this. Snicker salad sounded a little strange to me but I was assured by everyone there that I was going to love it and boy... oh boy... did I! It is a delicious incredibly sweet treat that quickly became a family favorite in my household.

Enjoy!

(credit:  http://www.facebook.com/TexasRecipes )

Ingredients:

3 tablespoons butter or margarine
1 package (10 oz., about 40) regular marshmallows
Food coloring (optional)
6 cups Kellogg’s Rice Krispies cereal
12 lollipop sticks or wooden ice cream sticks
Flaked coconut (optional)
Multi-colored sprinkles (optional)
Semi-sweet chocolate morsels, melted (optional)

Directions:

In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted.

Remove from heat. Stir in food coloring, if desired.

Add rice krispies cereal. Stir until well coated.

Using 1/2-cup measuring cup coated with cooking spray divide warm cereal mixture into portions. Using buttered hands shape each portion into ball. Cool.

Insert wooden stick, if desired. Decorate with coconut, multi-colored sprinkles and/or melted chocolate, if desired.

Let stand until firm. Best if served the same day.

Cheesy Chicken Enchilada Soup - YUM

I am completely in love with Chili’s Cheesy Chicken Enchilada Soup and have been since the very first night I worked there as a server and my trainer forced me to try it. I am so glad she did. I have been looking and looking for an enchilada soup recipe to make at home ever since.

Tonight, we tried this one and it was fabulous! I used a little of the seasoned chicken to make quesadillas to go with the soup.

If you love Chili’s Chicken Enchilada Soup, you are going to love this. You ready for some cheesy goodness? Alright then, here we go!

Such Yum Yum Goodness
